Baked Rice Pudding

Rice, milk, and sugar baked slowly with nutmeg until set and creamy.

Serves 8

Rice was imported from the Carolinas and became a common pudding in American kitchens. Baked slowly in a low oven, it thickened into a soft, comforting sweet.

Ingredients

Dairy & Eggs

  • 4 cup milk
  • 2 tbsp butter
  • 2 eggs

Pantry / Durable

  • 1/2 cup rice
  • 1/2 cup sugar
  • 1/2 cup raisins

Spices & Seasoning

  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon

Method

  1. Stir the rice, sugar, and raisins together in a buttered baking dish.

  2. Beat the eggs into the milk and pour it over the rice.

  3. Dot the top with butter and grate nutmeg and cinnamon over it.

  4. Bake slowly, stirring once after the first half hour, until the pudding is set.

  5. Serve warm or cold.
