A dish from Clement Freud
Buttered bread layered with raisins and baked in a vanilla custard until puffed and golden.
Serves 6
Bread and butter pudding is a thrifty English classic, and Freud approved of thrift. Stale bread, a little butter, raisins, and a simple custard are all it takes to make something that tastes far grander than its parts.

Butter the slices of bread and cut them into triangles. Layer them in a buttered dish with the raisins, overlapping the points.
Whisk the eggs, milk, sugar, and a little vanilla together and pour it over the bread. Let it soak for twenty minutes.
Sprinkle the top with a little extra sugar and dot with butter.
Bake at 350°F for about forty minutes, until the custard is set and the top is golden. Serve warm with cream.
