Salt cod was the great preserved fish of the Atlantic trade, and codfish balls were a New England breakfast and supper dish. The fish was soaked, cooked with potatoes, and fried in fat.

Soak the salt cod overnight, changing the water several times.
Simmer the cod and potatoes together until both are tender, then drain well.
Mash them together with the butter, egg, and pepper until smooth.
Shape the mixture into balls and roll them lightly in flour.
Fry in hot fat until browned and crisp, and serve hot.
