Frugal Fried Rice

Cold rice stir-fried with egg, vegetables, and soy sauce, a thrifty way to use up leftovers.

Fried rice is the frugal cook's greatest trick, and Smith presented it as such: yesterday's rice, a couple of eggs, whatever vegetables are on hand, and a hot wok. It is fast, cheap, and better than the sum of its parts.

Ingredients

Produce

  • 4 scallions

Dairy & Eggs

  • 2 eggs

Frozen

  • 1 cup peas

Oils & Vinegars

  • 2 tbsp oil

Pantry / Durable

  • 4 cup rice
  • 2 tbsp soy sauce

Method

  1. Heat the oil in a wok over high heat until it shimmers. Scramble the eggs quickly and set them aside.

  2. Add the cold rice and stir-fry for a few minutes, breaking up the clumps, until it is hot and beginning to color.

  3. Add the peas and chopped scallions and stir-fry for a minute more.

  4. Return the egg, splash in the soy sauce, and toss everything together. Serve at once.
