Cider warmed with cinnamon, cloves, and orange peel, the winter drink of the colonial tavern.

Cider was the ordinary drink of the American farm and tavern, and mulling it with spice made a warm cup for cold evenings. A little rum or brandy might be added, but the cider was the point.

Spices & Seasoning
Pour the cider into a heavy pot and set it over low heat.
Add the cinnamon sticks, cloves, brown sugar, and strips of orange peel.
Warm gently for half an hour without letting it boil.
Taste and add more sugar if the cider is sharp.
Strain and serve hot in mugs.
