Raspberry Shrub

A sweet-tart syrup of raspberries and vinegar, mixed with water for a refreshing drink.

Serves 8

Shrub was a colonial way to preserve summer fruit in vinegar and sugar, making a syrup that kept through the year. A spoonful in water made a cooling drink, and it could also flavor punch.

Ingredients

  • 4 cup raspberries

Oils & Vinegars

  • 1 cup apple cider vinegar

Pantry / Durable

  • 2 cup sugar

Method

  1. Crush the raspberries and cover them with the sugar.

  2. Let them stand for a day until the juices run freely.

  3. Strain the syrup and stir in the vinegar.

  4. Bottle the shrub and keep it cool.

  5. To serve, mix a spoonful or two with cold water or soda.
