Shrub was a colonial way to preserve summer fruit in vinegar and sugar, making a syrup that kept through the year. A spoonful in water made a cooling drink, and it could also flavor punch.

Crush the raspberries and cover them with the sugar.
Let them stand for a day until the juices run freely.
Strain the syrup and stir in the vinegar.
Bottle the shrub and keep it cool.
To serve, mix a spoonful or two with cold water or soda.
