The Silver Palate brownies are deliberately underbaked in the middle, so the center stays fudgy while the edges firm up. They are the brownies that made the shop's reputation and are still the standard for many home bakers.

Melt the chocolate and butter together over low heat and let the mixture cool slightly.
Beat the eggs and sugar until pale, then stir in the chocolate mixture and a little vanilla.
Fold in the flour, salt, and walnuts just until combined. Do not overmix.
Pour into a buttered pan and bake at 350°F for about thirty minutes, until the edges are set but the center is still soft. Cool before cutting.
