The end of a Renaissance banquet often brought cheese, honey, and fruit rather than a sweet. The salt of the aged pecorino and the sweetness of the honey were considered a perfect pair.

Choose a well-aged pecorino and cut it into thin wedges.
Warm a little honey if it is thick.
Arrange the cheese on a plate with figs, pears, or grapes.
Drizzle the honey over the cheese and scatter a few walnuts alongside.
Serve with a glass of sweet wine.
