Sweet Potato Pone

Grated sweet potato baked with molasses, butter, and spice into a dense pudding.

The sweet potato was a southern field crop and a winter staple, and pone was one of its simplest uses. Grated and baked with molasses and spice, it made a sweet to serve with the main meal.

  • 1/4 cup butter
  • 1 cup milk
  • 2 eggs

  • 1/2 cup molasses

Spices & Seasoning

  • 1 tsp ginger
  • 1 tsp cinnamon

Method

  1. Grate the raw sweet potatoes into a bowl.

  2. Stir in the molasses, melted butter, milk, and beaten eggs.

  3. Season with ginger, cinnamon, and a pinch of salt.

  4. Pour the mixture into a buttered dish and bake until set and browned on top.

  5. Serve warm in spoonfuls.
